If you're a farmer in Ontario raising cattle, poultry, lamb, or pork, you've probably asked yourself: Where do I take my animals for processing? How does custom meat processing work? What's the difference between a large industrial facility and a smaller processor? And how do you find someone you can trust?

Rua Meats is a provincially licensed abattoir located in Foxboro, Ontario - serving farmers, small producers, and businesses across Eastern Ontario. We specialize in custom meat processing for small to medium-sized operations. Here's how it works, what you need to know, and why working with a local processor matters.

What Is Custom Meat Processing?

Custom meat processing means you bring your animal - or animals - to a facility where they're humanely slaughtered, butchered, and processed according to your exact specifications. Unlike industrial meat plants that process thousands of animals per day on a standardized line, custom processors like Rua Meats work with smaller batches and adjust for your needs.

This is especially important if you're raising naturally-raised livestock. Industrial processors don't always understand or respect the care you've put into raising your animals. Custom processors do.

Why Choose Custom Meat Processing?

You Control the Cuts

At a custom processor, you decide how your animal is butchered. Want specific steak thicknesses? Ground meat instead of large roasts? Custom portions? Bones saved for broth? A custom processor adjusts. Industrial plants don't.

ISNA Halal Certified

Every animal processed at Rua Meats is handled to ISNA Halal certification standards. This matters for quality and consistency, whether you need Halal certification or not. It means proper handling, respect for the animal, and a rigorous process from start to finish.

Support Local

When you use a local processor, your money stays in your community. You get to know the people handling your animals. You can ask questions. You build a relationship instead of being a number in a queue.

Naturally-Raised Animals Get Respected

If you've invested time and care in raising naturally-raised livestock, you want a processor who understands that. Industrial facilities process animals on a standardized timeline - no adjustments, no flexibility. Custom processors understand that naturally-raised animals deserve care through every step, including processing.

How the Custom Processing Process Works at Rua Meats

Step 1: Contact & Scheduling

Call or email Rua Meats to discuss:

  • Type of animal(s) - beef, poultry, lamb, pork
  • Number of animals
  • Desired processing style - how you want it butchered
  • Any special requests - custom cuts, specific packaging, etc.

We'll give you a booking date and walk you through what to expect.

Step 2: Drop-Off

Bring your animal(s) to our facility in Foxboro. We handle the rest - slaughter, butchering, and packaging. The process is humane and professional. Your animal is treated with respect from arrival to finish.

Step 3: Processing

Typical turnaround is 3 - 5 business days. During peak season (fall), expect 5 - 7 days. We process your order according to your specifications:

  • Whole carcass breakdown
  • Custom cuts (steaks, roasts, ground, etc.)
  • Specific portion sizes
  • Your preferred packaging

You'll receive detailed paperwork showing:

  • Hot carcass weight (weight immediately after slaughter)
  • Hanging weight (carcass after removal of hide and organs)
  • Packaged weight (final meat you take home)
  • Individual cut breakdown and pricing

Step 4: Pickup or Delivery

Pickup: Come to our Foxboro facility in Belleville to pick up your processed meat.

Delivery: We deliver across Eastern Ontario - free delivery to Belleville and Kingston areas, paid delivery to other regions including Quinte West, Peterborough, Ottawa, and Hamilton.

Step 5: Payment

You pay based on hanging weight and the cuts you requested. Pricing is transparent - no hidden fees, no surprises.

Understanding Hanging Weight vs Packaged Weight

This confuses many first-time customers, so here's the breakdown:

Hanging Weight = The carcass after slaughter, with hide, organs, and head removed. This is what you pay for.

Packaged Weight = The final meat you take home after butchering, trimming, and removing bones.

Expect packaged weight to be 60 - 75% of hanging weight, depending on:

  • How much fat you want trimmed
  • Bone-in vs boneless cuts
  • Processing waste (some loss is normal)

For example:

  • Hanging weight: 600 lbs
  • Packaged weight: ~400-450 lbs (your actual meat)

This is normal and expected. Any processor using these terms is being honest with you.

What Animals Can You Process?

Rua Meats processes:

  • Beef - cattle from local farmers
  • Poultry - chicken, turkey
  • Lamb - full animals or by-the-pound orders
  • Pork - custom cutting available

All animals must be naturally-raised and meet our handling standards.

Cost of Custom Meat Processing in Ontario

Pricing varies based on:

  • Type of animal
  • Size of animal
  • Complexity of butchering (simple cuts vs custom cuts)
  • Current processing demand

Rather than quote a fixed price here (which changes), contact Rua Meats directly for pricing on your specific animal(s). Pricing is always transparent with no hidden fees.
